The fruits of the Japanese quince are rarely used fresh. The structure of the pulp is tough, grainy, not juicy. Due to the presence of tannins in the composition of fruits, the juice is astringent, and there is bitterness in the taste. Features of making wine

For the preparation of an alcoholic drink, it is better to use Japanese quince. It contains a lot of sugars, and natural yeast is present on the surface. Take varieties of any ripening period. After harvesting, the quince is not immediately processed, but left in a cool room. Fruits of the early varieties survive for two weeks, and the late ones - for 1.5–2 months. During this time, the structure of the fruit will become softer, and the bitterness will disappear in the taste.

It is advisable to pre-prepare the wort, then make wine on its basis. This technology allows you to increase the shelf life of the drink. The raw materials are placed in any fermentation tank, the main thing is that the size of the neck allows you to set the shutter. To do this, use a rubber medical glove with a punctured finger or lead a rubber tube into the water.

Important! The completion of fermentation is determined by the state of the water seal: when carbon dioxide ceases to be released into the water, the wine is won. As for the glove, at the beginning of the process it will be enlarged, then empty.

There are several reasons why a wine might not work. If you exclude them, then there will be no problems with making a homemade drink from quince:

  1. Poorly processed fermentation or starter tank. Before processing quince, the container is washed with soda, rinsed and poured over with boiling water.
  2. The ratio of the components of the recipe has not been observed.
  3. In the process of pouring the starter culture, bacteria got into the fermentation tank. It is recommended to carry out all intermediate processes with medical gloves.
  4. Quince is poorly processed, partitions or seeds got into the workpiece.

Recipes for making wine from quince at home

Wine made from Japanese quince is made with the addition of apples, grapes, lemon, or in the classical way - without additional components. There are options when the raw material is pre-heat treated. The output is a low-alcohol drink. If desired, it can be fixed with vodka or alcohol. Several of the most common options will help you make your own wine.



  • quince - 10 kg;
  • sugar - 500 g at stage 1, then 250 g for each liter of liquid;
  • citric acid - 7 g / l;
  • water - 500 ml per 1.5 liters of liquid.


  1. Quinces are not washed. Remove the core, cut the fruit into pieces and grind it on a fine grater or use a meat grinder.
  2. The workpiece is placed in an enamel or plastic container.
  3. Dissolve 500 g of sugar in cold water, add to quince.
  4. Cover with a cloth from above so that foreign debris or insects do not get into the workpiece.
  5. The resulting wort is left for 3 days to start fermentation. Stir periodically.
  6. If mash particles float to the surface, they are removed with a clean slotted spoon. During 8-12 hours of the first day, the leaven will ferment.
  7. The wort is filtered, the pulp is carefully squeezed out, the waste is thrown away.
  8. Measure the volume of the resulting liquid. Add citric acid according to the recipe, water and sugar at the rate of 150 g per 1 liter. Stir until the crystals dissolve.
  9. The raw material is poured into the fermentation tank and the shutter is installed.

Important! The container is filled to about 70% so that there is room for the foam to rise.

For full fermentation, a room temperature of 22-27 0C is provided.

Algorithm for further actions:

  1. After 5 days, remove the shutter, drain a little liquid and dissolve 50 g of sugar in it (per 1 liter). Poured back, return the odor trap.
  2. After 5 days, the procedure is repeated according to the same scheme: sugar - 50 g / 1 l.
  3. Leave the wine to ferment.

The process can take from 25 days to 2.5 months, readiness is determined by the shutter.

The won wine is separated from the sediment and poured into bottles or glass jars, the temperature is lowered to + 10-15 0C. The infusion process takes 5-6 months. At this time, the appearance of sediment is monitored. It is periodically separated.

With lemon

The lemon recipe has a balanced sweet and sour taste. Required components:

  • lemon - 6 pcs.;
  • quince - 6 kg;
  • water - 9 l;
  • sugar - 5 kg;
  • yeast (wine) - 30 g.

Wine making process:

  1. The fruits are crushed to a puree state. Placed in a cooking container.
  2. Add water, stir and boil the workpiece for 15 minutes.
  3. Remove from stove and leave for 4 days
  4. Carefully separate the liquid from the sediment.
  5. The zest is crushed.
  6. Lemon, yeast and sugar are added to the liquid.
  7. Placed in a container with a water seal.
  8. The fermentation process will be short-lived, when it is over, the wine is poured into a clean container. A 10L glass jar will do. Leave to infuse.

In the course of exposure, the sediment is periodically separated. Then bottled.

The alcoholic drink has a strength of 15-20%

A simple recipe

This is the easiest option that even budding winemakers can use. A minimum of ingredients is required:

  • quince - 10 kg;
  • sugar - 150 g per 1 liter;
  • water - ½ of the volume of the juice obtained.

Phased technology:

  1. The processed quince is passed through a juicer.
  2. Combine juice and pulp, measure the volume.
  3. If there is a lot of raw materials, they are poured into an enamel bucket.
  4. Add raw water at the rate of 5 liters per 10 liters of wort.
  5. Sugar is poured in a proportion of 100 g / 1 l, having previously dissolved it in water. Taste: the wort should not be cloying or sour. Best of all, if it turns out to be a little sweeter than regular compote.
  6. The container is covered with a clean cloth and put on preliminary fermentation for 4 days.
  7. When the process begins, a foam cap will appear on the surface. It must be stirred several times a day.
  8. The mass is filtered, tasted for sweetness. If the preparation is acidic, add water and sugar.
  9. Poured into containers with a water seal.

Advice! To speed up the preliminary fermentation, raisins are added to the wort.

After 10 days, decant the precipitate and add sugar (50 g / 1 l).

When the process is complete, it is bottled, left to infuse.

To increase the strength, vodka or well-purified moonshine is added to the finished product

With grapes

The grape-quince drink will be to everyone's taste. Required components:

  • grapes - 4 kg;
  • quince - 6 kg;
  • sugar - 1.5 kg;
  • water - 4 l.

Wine making process:

  1. The grapes are not washed. It is crushed until smooth together with the fruit brush.
  2. Quince is crushed to a puree state in any convenient way.
  3. Combine fruits, add water. Pour 550 g of sugar previously dissolved in water.
  4. Cover the container. Fermentation will take 3 days.
  5. The mass is squeezed out well, 2 liters of water are added, tasted, and sugar is added if necessary.

Poured into containers with a water seal. After two weeks, filter from the sediment, add sugar. Leave the wine to ferment. Then the precipitate is poured off and insisted.

With white grapes, quince wine turns out to be light yellow, with the addition of blue - dark pink

A sparkling wine

A low alcohol drink prepared in this way is similar to champagne.


  • quince - 1 kg;
  • sugar - 600 g;
  • vodka - 500 ml;
  • wine yeast - 2 tbsp. l .;
  • water - 5 l.;
  • raisins - 2 pcs. 0.5 liters.


  1. Boil the syrup. When it cools down, it is poured into a fermentation tank.
  2. The quince is cut into small cubes, sent to the syrup.
  3. Yeast and vodka are added.
  4. Install a water seal. Kept warm for two weeks. The temperature is lowered to 15-18 0C and the workpiece is not touched until the end of fermentation.

With barberry

Additional ingredients are often added to the alcoholic beverage to add interesting notes. Winemakers recommend making quince wine with barberry berries. To prepare it, you need a minimum of ingredients. The composition of the drink:

  • barberry - 3 kg;
  • quince - 3 kg
  • sugar - 4 kg;
  • raisins - 100 g;
  • water - 12 liters.


  1. Fruits and berries are crushed until smooth.
  2. Put in a container, add raisins and 1 kg of sugar.
  3. Leave for preliminary fermentation for 3 days. The mass is stirred.
  4. The raw material is squeezed out as much as possible, placed in a fermentation vessel.
  5. Add water, 2 kg of sugar. Close with a water seal.
  6. After 10 days, decant, the precipitate is poured out. Add 0.5 kg of sugar.
  7. The procedure is repeated two weeks later.

When the wine is won, it is poured for infusion and lowered into the cellar for 6 months. The sediment is removed periodically.

Quince wine is considered ready if there is no sediment at the bottom. Until that time, it is separated several times. The winning drink is bottled and hermetically sealed. Wine must be stored in a dark place with a temperature no higher than +7 0C. Experts recommend not placing the bottles, but placing them horizontally. The shelf life of a low-alcohol drink is 3–3.5 years.

Important! Long exposure does not add value to a low alcohol beverage. Over time, the wine loses its aroma, thickens, and bitterness appears in the taste.
